The hot days have arrived and if we listen to the body it asks for refreshing and light foods. And as nature is wise during these months it offers us a great variety of fruits and vegetables.

These are the 4 easy and tasty salads for this summer

– Spinach, apple, grape, walnut and feta salad
– Salad with spinach, roasted pumpkin, strawberries and Feta cheese
– Cherry Tomato, Piparra and Garlic Salad
– Red cabbage, blood orange and peanut salad

Spinach, apple, grape, walnut and feta salad

Ingredients

– spinach
– Apple
– seedless grapes
– walnuts
– feta cheese
– extra virgin olive oil
– vinegar
– honey
– Salt

Elaboration

1- Clean and cut the apple and grapes.
2- Put the spinach, the fruits, the nuts and the cheese in a bowl.
3- Make a dressing with a tablespoon of honey, three of oil, one of vinegar and salt to taste. Mix everything well.

Spinach, roasted pumpkin, strawberry and feta salad

Ingredients

– spinach
– pumpkin
– strawberries
– feta cheese
– extra virgin olive oil
– vinegar
– honey
– Salt

Elaboration

1- Peel and dice the pumpkin.
2- Bake at 200ºC 20 minutes (stir from time to time so that it is golden brown on all sides).
3- Cut the strawberries and crumble the Feta cheese.
4- Put the spinach, the roasted pumpkin, the feta cheese and the strawberries in a bowl.
5- Make a dressing with a tablespoon of honey, three of oil, one of vinegar and salt to taste. Mix everything well

Cherry Tomato, Piparra and Garlic Salad

Ingredients

– Cherry tomatoes
– Garlic
– piparra
– extra virgin olive oil
– mango vinegar
– Salt

Elaboration

1- Blanch the cherry tomatoes (bring water to a bowl, when it boils, dip the tomatoes for 10 seconds and take out)
2- Carefully peel the tomatoes.
3- Make a rehash with the garlic (heat oil in a frying pan and brown the garlic cut into slices).
4- Cool the sauce, add the vinegar and the salt and emulsify.
5- Cut the piparras thinly.
6- Mix the tomatoes, the piparras and the garlic dressing.

Red cabbage, blood orange and peanut salad

Ingredients

– red cabbage
– blood orange
– peanuts
– extra virgin olive oil
– mango vinegar
– Salt

Elaboration

1- Cut the red cabbage very fine, add salt and leave it in a bowl overnight (this is not so hard).
2- Dress the cabbage with a vinegar vinaigrette, crushed mango, oil and salt.
3- Remove the first layer from the orange (the segments without the skin).
4- Put the cabbage, the orange and the peanuts in a bowl.
